Uley’s Cabin Elegant Ski in Ski Out Restaurant Slopeside at Crested Butte Ski Resort
Mount Crested Butte, CO – Tucked away amongst massive pines trees located near the base of the twister chairlift half way up the Crested Butte Ski Resort lies the intimate Uley’s Cabin. Hungry skiers and snowboarders can literally slide right up to the front door. Having lunch at the cabin was unlike any on mountain dining experience I have ever had.
Chef Danny Rosa and his team of talented chefs including our friend Matt Santor prepare a stunning gourmet lunch of upscale Colorado Cuisine seven days a week. The atmosphere at Uley’s cabin is very unique for an on mountain dining experience, you feel like your in a small family run European chalet. Upon entering the cabin skiers are given covers for the bottom of their boots to avoid slipping on the hardwood floors. This was the first sign that we had arrived at a true luxury restaurant.
We didn’t have to walk far to feel the warmth and coziness of the cabin once inside. The staff was eagerly awaiting our arrival and anticipated all of our needs. The views from the cabin are simply breathtaking, it was hard to focus on conversation as I just wanted to stare out at the massive peaks surrounding the ski resort.
Our meal started with the Smoked Trout Manage Trios featuring rainbow trout and caramelized onion ravioli, trout mousseline and my personal favorite the roasted trout potato cake. Uley’s trout was flavorful moist and very fresh. The Charcuterie Plate combined an assortment of world cheeses & wild game sausage that was impossible to stop munching on. Nothing was left of either of the appetizers, simply delicious, what a great way to start an amazing lunch.Our table’s entrees ranged from Uley’s Signature Colorado Elk Bourguignon slow braised elk stew to the Apple Wood Smoked Beef Tenderloin with a roasted shallot red wine demi glace, sounds tasty again consider this was for lunch. I chose the Duck Two Ways with roasted duck breast and my favorite the mouth watering duck leg confit with a huckleberry sauce.
For desert the table shared Uley’s famous Chocolate Bread Pudding. The warm desert was the perfect ending to a great meal. Uley’s cabin also features a very extensive wine list that is sure to appeal to any visiting or local wine aficionados.Uley’s cabin is also open for Sleigh Ride Dinners, Wednesday through Saturday evenings. Reservations are required for dinner and recommended for lunch. We will be sure to report back on how the sleigh ride dinner is.
For a very unique on mountain dining experience do yourself a favor and ski over to Uley’s cabin for lunch even if your not hungry be sure to check out the famous Ice Bar that sits in-front of the restaurant.
