It’s amazing that in this day and age were for the most part removed from our food sources. Sure I grew up eating meat, willing to bet you did too, however, I had no idea where it was coming from and to be completely honest it wasn’t until recently I started to care.
Most of us now pay attention to labels on our meat and chicken after seeing the recent food documentaries online (if your not sure what I’m talking about you may want to start here) and if I buy my meat or chicken from the store you better believe it’s going to be the free-range, grass-fed kind. But what’s even better than buying this stuff from the store is actually going out and hunting it yourself.
How to Prepare Grouse
Remember to save the legs too (buffalo wings) as some people like to call them. Wash the remaining feathers off and remove any of the tiny shotgun pellets the might be still lodged inside the breast.
Get a sharp knife, ideally one that is similar to something you would use to filet a fish. I like to use a Kilimajaro Kibo Knife to cut the meat off the bone and then another knife (typically a household knife) to cut the Grouse into smaller pieces for cooking fajitas. Investing in a good hunting knife will work wonders for processing Grouse and other game.

I have used the Gerber Shears for both Pheasant and Ruff grouse. The shears worked well cutting through wing bone and skin. The separable shears made it very to clean. Shear separation for clean-up, sturdy construction both the shears and the sheath One thing to keep in mind is I I still have to use two hands to operate these shears. Maybe instead of finger holes, there should have been handles.
- Step #1 – Saute some Garlic.
- Step #2 – Add in some Bell Peppers ( I like to prep them the night before, see the timeline below.. ) Let them cook for 10 minutes just below Medium.
- Add in your cut up grouse pieces.
- Season Natural Salts from Wyoming and crushed up Black Peppercorns.
- Cook until they look like fajitas.
Don’t forget to wash off some of the cooked grouse and give some pieces to your dog too.

Not a bad way to spend 6 hours, as I type this the next day I am whooped, my dog is still sleeping (its 10 AM) and I had a delicious meal last night and leftovers for easily 2-3 more meals. Be sure to give thanks to the birds…
Grouse Hunting Tips
Step #1 The first step in Grouse hunting is to get a good grouse hunting dog, I have had luck with German Shorthaired Pointers that have been bred for hunting upland game. Grouse hunting without a dog is possible, however, once you see a working dog in action it will be hard to go out and hunt any other way.
Step #2 Spend time figuring out where Grouse and other birds like to hang out, the time of day they come out, what the eat and where they sleep. You’re not just going out killing.
Step #3 Before you head out in the field make sure you have the proper Grouse hunting hear, notice we said clothing before gun, bullets, etc.. Get some long pants and a long sleeve shirt (Grouse like to hang in terrain that tears at your clothes, if it’s not ripping at your clothes, odds are your hunting in the wrong place).
Step #4 This one is especially important for hunting around Jackson, WY or anywhere for that matter is to wear some Bright Orange (Dick Cheney has a house nearby, seriously) ideally an actual hunting vest like the Filson Mesh Upland Game Bag. Not only will this vest keep you safe, but it’s also a great way to transport birds, food, and water while in the field.
Step#5 Invest in a good grouse hunting gun. Remington makes some amazing shotguns for hunting grouse.
